2 cups Whole Wheat Flour*
3/4 tsp Baking Soda
1/2 tsp Salt
1 cup Sugar
1/4 cup Butter, softened
2 large eggs
1 1/2 cup Mashed Banana’s (2-3)
1/2 cup non-fat Vanilla Yogurt
1 tsp Vanilla
2 cups Whole Wheat Flour*
3/4 tsp Baking Soda
1/2 tsp Salt
1 cup Sugar
1/4 cup Butter, softened
2 large eggs
1 1/2 cup Mashed Banana’s (2-3)
1/2 cup non-fat Vanilla Yogurt
1 tsp Vanilla
Directions
Preheat oven to 350 degrees.
Combine flour, baking soda and salt.
In a separate large bowl, add sugar and butter. Beat at medium speed with an electric mixer until well blended. Add banana, yogurt, eggs, and vanilla. Beat until well blended.
Add flour mixture and beat at low until just moist.
Coat loaf pan with cooking spray. Pour batter into pan and spread evenly.
Bake for 1 hour.
* You can substitute 1 cup of flour for 1 cup of Almond Meal to reduce the gluten and increase the protein. You cannot substitute all of the flour for almond meal as some gluten is needed to hold the bread together. However, the almond meal gives the bread a nice texture and flavor to complement the banana.
